Have you ever heard of Chufa?
It is also known as Tigernut, or Earth almonds, and it is in fact not a nut; it’s a tuber. The crop is harvested in November-December and it is carefully washed and dehydrated, without damaging the tubers. It is perfect for people with allergies, and when used as a flour, for people who cannot or doesn’t want to eat gluten. Chufa can be found wild and can cultivated. It has been cultivated as far back as ancient Egypt, and was, back then, a staple in their diet. It is one of the oldest cultivated crops in ancient Egypt and Chufa has even been found in tombs, which signifies it was one of the Egyptians most valued possessions.
In ancient Egypt, Chufa was consumed by boiling it in beer, roasting it or turning it into sweets. It was also used as a natural medicine, to be ingested, used as a salve and even as an enema.
In Hispanic countries, Chufa is used to create a sweet beverage called horchata.
What does it taste like?
When it comes to the taste, it is slightly sweet and it has a warm, nutty flavour. The oil derived from it is considered a high quality oil that can be used both for salads, and for frying. The tubers can be ground to create a nutritious flour or to create various warm and cold beverages. It is high in energy and minerals such as potassium.
Other uses for chufa include being used as fishing bait, and it may also become a natural biofuel in the future.
How to make it:
To make the Chufa-Banana Bread, you need:
500 grams of ground Chufa
3 ripe bananas.
Add about half of the flour in a large bowl and with a spoon, mash the bananas into the flour.
Then, add water about a cup and a half. Keep working in the flour, until you’ve added all the 500 grams of it.
Work it together with your hands until it becomes a dough, and add more water if need be.
Form the dough into balls and flatten them slightly.
Place the soon-to-be bread inside a Griddler or a sandwich maker until they’re lightly brown and firm.
You can eat them as they are, with some fresh fruit, dip them in hummus or you can place a piece of dark sugar-free chocolate on top, while the bread is warm, and let it melt into the bread. You can also eat it with some homemade vegan ice cream.
